Spinach Pasta Salad

Ingredients

1 box Betty Crocker Suddenly Salad Classic Pasta Salad Mix
3 Tablespoons cold water
2 Tablespoons olive oil or vegetable oil
1 Tablespoon lemon juice
2 cups baby spinach leaves
1 tomato, sliced into wedges
1/2 cup baby carrots, sliced in half
Grated parmesan cheese

Directions:

Fill a 3- quart saucepan about 2/3 full of water and bring to a boil. Add pasta mix (from Suddenly Salad pkg) and gently boil uncovered for 12 minutes, stirring occasionally. Set aside seasoning packet.

Drain pasta; rinse with cold water and shake to drain well.

In a medium bowl, stir together contents of seasoning packet, water, oil and lemon juice.

In a glass serving bowl, assemble the salad in layers as follows:
-pasta
-spinach
-tomatoes
-carrots
-salad dressing

Cover and refrigerate until salad is served.

Top with parmesan cheese just before serving.

For a main dish salad:
Add 1 1/2 cups cut up cooked chicken or ham on top of the spinach and continue with the remaining layers.
